Our equipment is used from the point of harvest on the seabed through to the batch weighing of the cooked finished product. Production systems are available as individual items, managed lines or complete turnkey project-managed operations, including the provision of services and facilities.
Much of the equipment specified for the processing of various types of bivalve shellfish has commonality with the rest of our shellfish processing portfolio, with the exception of key process items such as eviscerating units that perform product-specific roles.
Polar Systems offer a range of deck-based processing and handling solutions, including washing, grading, sorting and specialist tasks such as eviscerating. Our team of technical designers is able to provide information and designs to ensure a simple and safe workflow and our site teams are available for installations on land and in dock.
Polar Systems offer a range of infeed solutions feeding manually from sacks, big bags or directly from lorries, handling, storage and waste removal systems. These include mechanical reels and hydraulic systems to de-wood, de-mud and remove foreign objects from the product prior to entering the processing environment.
The cooking system specified will depend on product and desired outputs, however Polar Systems offer a comprehensive range of batch and continuous atmospheric, immersion and steam systems as well as their unique 45 degree pressure cooking systems. All systems are based on over 30 years of industry knowledge and are specifically designed to be easy to use with straightforward user interfaces that allow the operator to quickly and simply adjust for different products. Designed to be easy to clean and maintain while retaining a robust build and the ability to operate reliably in the most severe conditions for extended periods.
Added value processes are offered from our extended range of machinery or to clients bespoke requirements, and include glazing, mixing, seasoning, grading and weighing systems to name a few.

Processing of waste materials, including shell meat separation, and added value processes such as shell washing and grading are also available. Optical systems for grading shells (scallop and alike) are available and can process up to 5 shells per second.
Polar System’s unique scallop eviscerating unit is a reliable, controlled method for processing scallops with reduced waste and reduced damage. A hydraulically adjustable decline support frame holds specially designed and developed CNC machine-profiled nip rollers driven by an electronically controlled system that provides a programmable multi-rotational action. Gentle nipping action is achieved by reversing rollers, removing waste and limiting damage to the meat. A high-pressure pump supplies fresh water to the top-mounted spray system, maintaining a clean product and roller system to help ensure optimum removal with low product damage. Following the eviscerating unit, a uniquely designed wash unit receives product into a water-filled infeed hopper, where a spray manifold gently flushes product into the specially designed wash reel. The partially submerged reel is designed to gently tumble and wash the product as it passes through the reel without any form of damage. Residual sand and silt are separated during the tumbling motion and collected in a tank under the reel.
